Quinoa and Sweet Potato Salad

Ingredients

2 Tbl White Wine Vinegar
1 Tbl Sesame Oil
1 tsp agave nectar
1 tsp tamari
1/2 tsp grated fresh ginger root
1/4 c. fresh squeezed OJ
1 C diced sweet potato
1C cooked quinoa
1/2 C snipped chives
2 Tbl slivered almonds
5 C Spinach or Kale
Directions
Makes 4 servings.
Cook Quinoa.
Wisk first six ingredients together. Set aside.
Boil the Quinoa. Remove use same pot to braise the spinach. Mix everything together.
