Introduction

A yummy, golden soup with soft and sweet butternut squash and pearl barley to warm you up on a winter's day.

A yummy, golden soup with soft and sweet butternut squash and pearl barley to warm you up on a winter's day.

I can't eat enough of this, it's soo good!

Number of Servings: 8

Ingredients

    8 cups Fat Free Chicken Broth (mine is homemade and defatted, and I use an additional heaping tbsp of powdered chicken stock - incl in nutrient calculations)
    3 cups cubed Butternut Squash
    2 medium carrots, sliced
    1 large onion, chopped
    2 celery stalks (small to medium), sliced or chopped
    1 cup pearl barley
    1 tbsp Turmeric
    3 cloves crushed garlic
    4 tsp fresh grated ginger


Directions

Place everything but the garlic and ginger in a soup pot and bring to a boil, let simmer until the vegetables are soft and the barley is cooked.

Add the grated ginger and garlic, have with your favorite bread or biscuit!

Eight generous servings!
