Low Calorie Corn Muffins

Introduction

Sweet and light corn muffins to accompany your soup or stew Sweet and light corn muffins to accompany your soup or stew
Number of Servings: 12

Ingredients

    1 cup flour
    1 cup cornmeal, yellow
    2 scoops protein powder
    2 TB Splenda
    2 tsp baking powder
    1/2 tsp salt
    1 egg
    1 Cup skim milk
    1/4 cup unsweetened applesauce

Directions

Preheat oven to 400 degrees. Spray 12 cup muffin pan with cooking spray.

Mix dry ingredients in a bowl. In a second bowl, mix egg, milk and applesauce. Stir wet ingredients into dry ingredients just until moistened. Evenly divide the batter into the 12 cups of the muffin pan.

Bake at 400 degrees for 14-16 minutes until edges are brown and inserted toothpick comes out dry. Cool on cooling rack and serve warm with low fat margarine and/or if desired.
