Whole Wheat Banana Berry Muffins

Introduction

Great for breakfast on the go or for a quick, healthy snack. These muffins are very tasty & moist, and low in fat and calories. Great for breakfast on the go or for a quick, healthy snack. These muffins are very tasty & moist, and low in fat and calories.

Ingredients

    2c Whole Wheat Flour
    2T Flax Seed Meal (ground flax)
    1/4 c Quinoa Flakes
    1/2 c old fashioned oatmeal
    1 T ground cinnamon
    1/4 t pumpkin pie spice
    1/4 t ground cardamon
    1/2 t salt
    1 t baking powder
    1/2 t baking soda
    1/4 c brown sugar
    1 c frozen mixed berries
    1/4 c unsweetened applesauce
    1/4 c agave nectar
    2 large eggs
    1/2 c strawberry yogurt
    2 large bananas, mashed

Directions

Mix dry ingredients and wet in seperate bowls. Add frozen berries to the dry ingredients - if using fresh berries add them to the wet and be careful not to mash.

Mash bananas and add to wet.

Add wet ingredients to the dry; mix until just moist.

Spoon ingredients into greased muffin tin (or use muffin cups in the tin).

Bake for 20 minutes at 375.

Allow to cool slightly before removing from tin.

Store in sealed container to maintain moisture and freshness.
