This is from the Martha Stewart Every Day Food mag, Jan 09. I think I tweaked it a little. My kids absolutely LOVED this one - my 6 yo dd gave it a 'full body thumbs up.' My ds said it looks like party food! lol!!!
Beets -3 small, shredded and rinsed
Carrot - 1 large, shredded
Beet tops - 1-2 cups, finely sliced
Dijon mustard - 2 tsp
Red Wine vinegar - 2T
Orange juice - 1/4 c
Light Olive oil - 1T
Combine all the ingredients and toss.
Let stand for between 15 min and an hour to marry the flavours.
