Turkey Taco Salad (Lite)

Introduction

I created this because my kids love taco salads but it is full of fat so switched some ingredients and they love it! Low fat with full flavor!! I created this because my kids love taco salads but it is full of fat so switched some ingredients and they love it! Low fat with full flavor!!

Ingredients

    1lb ground turkey breast
    1 tsp minced garlic
    2 tbsp taco seasoning
    3 heads of romain lettuce (chopped)
    16 oz can kidney beans rinsed & drained
    8 oz can sweet whole kernal corn drained
    1 pt grape tomatoes
    4 oz shredded low fat cheddar cheese
    1 avocado cut into chunks
    4 oz baked tortillas (crushed)
    Dressing:
    3/4 cup fat free italian dressing
    3 tbsp of lime juice
    1 tbsp taco seasoning

Directions

Brown turkey and garlic along with 1 tbsp taco seasoning and 2 tbsps of water. in a large serving bowl add lettuce, beans, corn, tomatoes, avacado. When turkey is done add to the top sprinkle with cheese.
In a mixing bowl whisk dressing, lime juice & taco seasoning pour over salad and top with crushed tortillas.
Sour cream optional. Enjoy!
