Ingredients

One package of Sanderson Farms chicken thighs (about 4lbs.)
one medium head of cabbage chopped
one medium onion chopped
one bag (1lb) baby carrots
one bag (1lb) frozen corn
one 10 oz. can of rotel with lime and cilantro
1/2 C dry rice
2 tbsp. dry cumin
1 tbsp. salt
Directions
add chicken to a large pot, cover chicken with water. bring to a boil, boil for about one hour. add carrots, frozen corn and rice, and rotel, cumin, and salt, simmer for 30 to 40 minutes or until carrots are tender. add cabbage and simmer till tender
