Protien Very Veggie Bake

Introduction

Excellent topped with a slice of cheese or salsa. Excellent topped with a slice of cheese or salsa.
Number of Servings: 4

Ingredients

    2 cups fresh mushrooms, sliced
    3 oz red bell pepper, sliced
    2 cups (1 carton) egg substitute
    Cooking spray

Directions

Place vegetables in a microwave safe bowl and cook on high for three minutes to release some of the liquid. When done cooking, remove bowl from microwave. While vegetables are cooking, preheat oven to 350, line 8x8 pan with parchment paper and spay with non stick spray. Pour vegetables into lined baking pan, pour egg substitute over vegetables and bake 30 minutes until eggs are set.

Let set 15 minutes and slice into 4 pieces.
