Red Onion, Poppy Seed Dressing

Introduction

My mother-in-law makes this....it's my favorite on spinach! This is a great dressing, when used in moderation. My mother-in-law makes this....it's my favorite on spinach! This is a great dressing, when used in moderation.
Number of Servings: 48

Ingredients

    1 Medium red onion chopped
    3/4 Cup Red Wine vinegar
    1/2 Cup Sugar
    1 1/2 Cups Olive/Canola Oil
    2 Tbs. Poppy Seeds
    1-2 tsp. Mustard
    1 tsp Salt or salt to taste
    Pepper

Directions

Put chopped red onion, vinegar, sugar, poppy seeds, and mustard in food processor. Pulse to coarsely puree. Then, with machine running slowly add oil until it emulsifies. Salt and pepper to taste. Makes about 3 Cups Dressing. 1 tbs. per serving
