Quinoa Taco Salad

Ingredients

    1/3 C Trader Joes Organic Quinoa
    1 C water
    Cumin seed, 1 tsp
    Crushed Red Pepper Flakes, 1 tsp
    Chili powder, 1 tsp

    8 oz Ground Lean Turkey
    1 Bell Pepper - med dice
    1/2 medium onion - med dice
    Garlic, 3 cloves
    1 Zucchini - grated
    1/4 C Salsa

    Lettuce, red leaf (salad), 1 head - shredded
    1 Avocado - sliced
    1 medium tomato - diced
    1 4 oz can sliced black olives

Directions

Cook quinoa in water with seasonings until water is absorbed - about 20 minutes.
Meanwhile brown the turkey meat and then add the garlic, onions, grated zucchini, and green pepper. Cook until veggies are tender and translucent. Add the salsa.
Mix in the cooked quinoa. Serve the mixture over the lettuce and top with tomatoes, olives and avocado.
