My Broccoli and Chicken Casserole

Introduction

I found this recipe on SparkRecipe.com but I don't like the consistancy of the fat free cheese AND I needed a lower sodium version. This is a modified version of the original. Number of Servings: 8

Ingredients

    1 can Healthy Request cream of chicken soup
    1/2 cup light mayonnaise
    1/2 cup skim milk
    1 bag (16 oz.) Broccoli, cooked and chopped
    12 ounces chicken breast, no skin, cooked and cubed
    1 cup 2% shredded fiesta blend cheese

Directions

Preheat oven to 350 degrees F

Mix chicken soup, mayo, and skim milk together
Place chicken in 9x13 baking dish (sprayed w/cooking oil so this wont stick to dish)
Place Broccoli over chicken
Pour soup mixture over all.
Sprinkle Cheddar Cheese on top

Cover and bake 30 Minutes at 350F then remove cover and cook another 5 Minutes.
Serve with noodles or rice.
MAKES 8 SERVINGS
