Made it at Thanksgiving; replaced canned cream of mushroom soup with a mix of half&half, minced mushroom and 1 tablespoon of starch. I'm still being asked for the recipe... Thumbs up! - 1/24/10

I used reduced fat Cream of Celery soup for the non-mushroom people and got rave reviews--had to make it again for Christmas--might try Cream of Onion soup next time. A friend adds a tiny bit of Liquid Smoke to his. - 12/26/11

I find the fat free creamy soups to lack a bit in the flavor department, so I added some extra herbs and spices, but I love this recipe! Thank you for the healthy idea! - 3/27/11

I've always made mine this way, too, but I add a bit of soy sauce... this ups the sodium level but gives a little zest. - 1/17/10

  • My cousin makes a green bean casserole that is to die for, but it is so fattening (she puts a lot of Swiss cheese in it)! I made this for our church Thanksgiving yesterday and it was a big hit. No one knew it was a healthier version until I told them. I will be making this again! - 11/11/13
