Mexican Lasagna

Introduction

This was really good, I had to use what I had on hand today, but will be trying it with low fat sour cream and cheese and whole grain tortillas next time. Oh, and my kids said it was "too cheesy", LOL. Number of Servings: 8

Ingredients

    10 oz Chicken Breast
    1/2 cup chopped onion
    1 tsp cayenne
    1/4 tsp cumin
    1 tsp chili powder
    1.5 cups picante sauce
    2 cups frozen corn
    2-(8") tortillas
    1/2 cup sour cream
    1 cup shredded cheddar cheese
    1 Tbsp chives

Directions

Chop the chicken and cook it along with the onions, cayenne, and cumin in a skillet on medium to medium-high heat until the chicken is cooked through and the onions are tender, stirring occasionally. Using the spoon you stirred with, work the chicken until it is in small pieces or almost shredded.

Add the chili powder, picante, and corn. Cook for a couple of minutes until heated through.

In an 8" pie plate, layer your ingredients in this order:
spread 1/3 of the meat sauce
lay 1 tortilla
spread 1/3 of the meat sauce
spread the sour cream
sprinkle with 1/2 of the cheese
lay 1 tortilla
spread remaining meat sauce
Cover with aluminum foil and bake at 375 for 25 minutes or until heated through. Remove the foil, sprinkle with the remaining cheese, cook until cheese is melted. Sprinkle with chives.
