Chicken Stir Fry

Introduction

Quick, easy. I prep everything before hand so dinner is a quick fix when I get in from a long day at work. Quick, easy. I prep everything before hand so dinner is a quick fix when I get in from a long day at work.
Number of Servings: 4

Ingredients

    2 chicken breast, boneless skinless, approx 1 lb
    2 cups, broccoli bite size pieces
    1 cup carrots strips
    1.5 cup mushrooms, sliced
    1 med onion, sliced
    ginger root, thinly sliced (to your taste preference)
    1 clove garlic (or more if you like)


    1 cup chicken broth
    1 tbsp cornstarch
    1 tsp low sodium soy sauce
    1/4 tsp sesame oil

Directions

Cut chicken into bit size pieces, season how you like (I use curry powder & pepper). Heat wok on high, add drizzle of olive oil and same of sesame oil. Quickly cook chicken. Remove from pan and keep warm.

Mix cornstarch, chicken broth, soy sauce and remaining sesame oil. I use a jar a shake it up well.

Cook veggies until desired tenderness, add chicken. Over med high heat add sauce and allow to thicken. I tend to add the garlic and ginger near the end to prevent burning.

I serve with brown rice (not calulcated in nutritonal info)

For a change up thrown in other green chinese veggies and a handful of whole wheat spaghetti noodles. Makes a great one dish meal and excellent leftovers.
