ED'S Chicken and Rice Soup

Ingredients


    5 quarts of homemade chicken broth, fat skimmed off
    4 stalksof celery with leaves diced
    1 bunch scallions both white and green diced
    1 cup Basmati rice
    1.75 lbs. diced chicken both light and dark meat no skin

Directions

24 servings, 1 cup

Prepare 5 quarts homemade chicken broth.
Add celery, scallions, rice, and cooked chicken to broth and bring to a boil. Reduce heat and simmer until rice is tender.
