Soup to Get Thin On

Number of Servings: 20

Ingredients

    3 48-oz. cans low-fat, low-sodium chicken broth
    2 medium-sized onions, chopped
    5 celery ribs, chopped
    5 parsnips, chopped (I omit these due to preference)
    1 head (8 cups) cabbage, shredded
    4 bell peppers (red, yellow or green) chopped
    8 oz. mushrooms, chopped
    10-oz pkg. spinach, chopped
    10-oz pkg. frozen broccoli florets
    10-oz pkg. cauliflower
    2-3 pieces chopped gingerroot
    14 1/2-oz. can crushed tomatoes
    1 Tbsp. black pepper
    1 Tbsp. salt


Directions

1. Combine all ingredients in slow cooker
2. Cover. Cook on low 6-8 hours

I serve over brown rice
