Introduction

Number of Servings: 12

Ingredients

    1.5 pounds grass fed organic heritage beef (family farmed)
    1 onion- small dice
    1/2 red pepper- small dice
    2 cloves garlic
    1 cup kale- minced
    2 fresh organic eggs
    2 matzo crackers- crushed (or use matzo meal)
    salt & pepper to taste
    4 slices uncured organic bacon strips cut in half
    2 tablespoons ketchup for topping

Directions

Prepare veggies and set aside. Crumble meat and add veggies, eggs, cracker crumbs, and seasoning. Mix together gently with hands (careful not to overwork the meat!) Separate meat into two loafs and top each with 1 tablespoon organic ketchup and 4 bacon slice halves arraged crosswise. Bake until internal temperature reaches a minimum of 160 degrees F.
