rice & sausage casserole

Ingredients

    4 Italian sausages, sliced
    1 large onion, cut in half and then sliced lengthwise
    1 large red bell pepper, sliced lengthwise
    2 carrots, peeled and sliced
    1 small zucchini, diced
    oregano, to taste
    4 cups cooked rice
    2 large tomatoes, diced
    2 Tbsp. tomato sauce (optional)
    6 Tbsp. chopped fresh basil
    1/2 cup grated Parmesan cheese (optional)

Directions

Brown sausages in a large frying pan.
When entirely cooked, remove the sausages to drain on paper towels.
Remove all but about 1 tsp. fat from pan.
Add onion, red bell pepper, carrots and zucchini. Cook until veggies are the texture you like.
Return sausages to pan; add oregano, rice and tomatoes; cook until heated through.
Top with Parmesan cheese, if desired.
