Ingredients

4 cups frozen shredded hash brown potatoes, thawed
6 eggs
160 grams black forest ham
66 grams low fat chedar cheese, grated
pepper (optional)
Directions
Preheat oven to 350. Combine all ingredients in a bowl, except cheese. Lightly coat a small casserole dish with non-stick spray. Place ingredients in dish, top with cheese. Bake uncovered for approx 40-45 minutes or until set.

Would you mind checking the ingredients on this? One cup of hash browns alone is 50+ carbs... but the nutrional info is only showing 16grams of carbs?? The recipe sounds delicious but those nutrional numbers are just too good to be true... Thanks! - 1/17/10

I did check. You are maybe looking at the nutrient content of fried hashbrowns? Maybe? I have double checked. I used shredded frozen potatoes. The nutrient content info is absolutely correct. FOUR cups of MY store bought shredded frozen hashbrowns (raw) is a TOTAL of 52 grams.
