Moe's Eggplant Pasta Sauce

Number of Servings: 8

Ingredients

    1 large eggplant (cubed small)
    1/4 cup olive oil (4 tbs or less)
    1 can diced tomatoes (2 cups)
    1 can tomato sauce (2 cups)
    1 onion (diced)
    5 mushrooms, whole (sliced)
    1 bell pepper (chopped)
    2 tbs italian seasoning or oregano
    2 tbs garlic powder
    2 tbs sugar (6 tsp)
    2 tbs basil
    salt or season-all to your taste (no salt is added in the main ingredient calculation)

    Serve over 2 oz portion of pasta. Makes 8 hearty servings



Directions

Sautee onions, peppers and mushrooms in olive oil. Add cubed eggplant and all other ingredients (except pasta).

Let simmer for about 30-40 minutes until thick. Stir frequently.

Boil pasta according to box directions (about 12 minutes).

Serve sauce over pasta for a delicious, healthy, meal. Add a tablespoon of grated parmesan cheese on top for extra flavor. Serve with a small side salad.

Makes 8 hearty servings (2 oz of pasta per serving).
