Moe's Guilt free Lasagna

Introduction

Lasagna without the guilt - and all too yummy! Lasagna without the guilt - and all too yummy!
Number of Servings: 10

Ingredients

    14 Lasagna noodles
    3 eggs, large
    2 cups cottage cheese, 2% milk fat
    1 can Hunts tomato sauce (four cheese)
    1 can mixed vegetables
    1 pack frozen mixed vegetables
    2 tbs italian seasoning (Tones)
    1 tsp garlic powder
    2 tsp ground cinnamon
    1 tsp crushed red pepper
    pepper to taste

    Makes 10 Large servings (261 cals)

Directions

Boil lasagna noodles until almost done, drain and set aside. (can prepare 4 at a time as you lay your layers).

Set aside: crushed red pepper, 1/2 cup of sauce and 1/2 tsp italian seasoning. These will be added on top at end of layering.

Combine all other ingredients (except sauce), mix egg into cottage cheese, vegetables and seasonings.

Layering:

Spread 1/2 cup sauce on bottom of 9" x 11" baking dish. Lay row of lasagna noodles, approximately 4-5 should fit length wise. Lay chesse and vegetable mixture on noodles, drizzle some sauce on top. Continue this layering process until all noodles are used.

As last step, sprinkle remaining sauce on noodles, sprinkle remainder of italian seasoning and red pepper on top.

Cover with foil and bake for 1 hour at 375 degrees, or until hot and bubbly.
