Horseradish salsa (for steak)

Introduction

This is a great additive to filet mignon. You can make and serve immediately, but I find that it has great flavor if you cover refirgerate at least 30 minutes. Number of Servings: 8

Ingredients

    1 lb tomatoes, 1/2 inch dice ( I use grape tomatoes and
    quarter them)
    1 cup loosely pack parsley leaves, chopped
    1/2 small red onion, minced
    2 tbsp prepare horseradish
    1 tbsp olive oil
    1 tbsp balsamic vinegar
    1/2 tsp salt

Directions

Mix all ingredients and serve over steak cooked to your liking. (Tastes even better if refrigerated at least 30 minutes before using)
