Super tomato pasta and meatballs

Introduction

This is an easy weeknight supper that takes only about 15 minutes from walking in the kitchen to sitting down to eat. The extra tomatoes and spinach add more heart-healthy nutrition. Whole wheat pasta adds fiber.

For even more punch, add other veggies, such as mushrooms, bell peppers, broccoli, etc.

Ingredients

    1/2 box (8 oz) of whole wheat pasta (I prefer Barilla)
    10 Armour meatballs
    1 teaspoon of extra virgin olive oil
    3 cups of fresh baby spinach
    1 can of Italian-style diced tomatoes
    1/2 jar (1 1/2 cup) of traditional pasta sauce (Prego Heart Smart)
    1/2 tablespoon each of dried rosemary, basil and parsley
    1 tablespoon each of grated Parmesan cheese and seasoned bread crumbs

Directions

* Heat olive oil on medium in a large skillet.
* In a large pot, bring 4-6 cups of water and bring to a boil.
* Add the fresh spinach and toss to coat the leaves in the oil. Saute until the spinach is wilted and very much reduced, about 2-3 minutes.
* Transfer the spinach to a plate and set aside.
* Add the pasta sauce, diced tomatoes, rosemary, basil, parsley and meatballs. Cover and simmer over medium heat until the meatballs are warm, about 7-8 minutes.
* While the sauce is heating, add the pasta to the boiling water and cook until tender, about 7-9 minutes.
* Drain the pasta and add to the sauce, stir to coat.
* Add the cooked spinach back and stirl to mix well. Top with the grated Parmesan cheese and bread crumbs.

Serves 4.
