1 box quinoa
2 cups low sodium chicken stock
2 cups water
1 red bell pepper
1 roasted red pepper
1/2 sweet onion
2 or 3 garlic cloves
1 1/2 cup frozen artichoke hearts
rough chop all the veggies and mince the garlic
spray a skillet with cooking spray and add veggies, when they are done (about 7 minutes) add to the quinoa, mix well and add ricotta, monterey jack and basil. Mix again and serve!

This does look good. I buy my grains bulk so I'm wondering how many cups or grams is in a "box". I'm guessing about 2 cups by the look of the recipe but I'd like to be sure. Anybody know? - 1/9/10
