Introduction

Boiled the beans myself so that the sodium isn't sky-high. Boiled the beans myself so that the sodium isn't sky-high.
Number of Servings: 19

Ingredients

    1 Tbsp olive oil
    18 oz chicken breast without skin
    1 medium onion
    .5 c carrot
    1 bellpepper
    (5) 14.5 oz Organic Diced Tomatoes
    8 oz tomato sauce
    16 oz. Rosarita Nonfat Traditional Refried Beans (didn't have them this day so the ingredients are different)
    6 c beans (mixture of kidney, black and great northern)
    4 Tbsp chili powder
    2 Tbsp cumin
    16 oz. corn kernels (frozen)

Directions

Soak beans overnight.
Sautee veggies (all except corn) in olive oil
Add chicken, heat through
Toss in the rest of the ingredients and let it go for a couple hours.

Makes 18 cups. 1 cup = 1 serving
