Roasted Butternut patties

Introduction

Roasted butternut squash, mashed, seasoned, and sauteed in small silver dollar style patties, served with dollops of raw honey. Sorry, no photo yet, as I ate them all!! Ingredients

    2 cups of roasted mashed butternut squash
    2 eggs
    2 slices of whole wheat bread, toasted and processed in blender to fine pieces.
    salt, pepper, red pepper, cumin, hot sauce, etc.

Directions

Cut the squash in half and scoop out the seeds. Place cut side down on a foil lined cookie sheet and bake at 350 degrees for 1.5 hours or until skin startes to loosen and brown. You should be able to peel the skin off the squash with only the aid of a small knife to cut around the stem ends. Mash in a bowl and season as desired. I recommend spicy. To 2 cups of the mashed butternut, add 2 eggs and 2 cups of bread crumbs. Mix well and drop by spoonfuls into hot non stick skillet. Flatten slightly. Cook on medium low heat til brown and flip carefully to brown other side. Serve with honey.
