Lime Coconut White Chocolate Chip Muffins

Introduction

I haven't tweaked this recipe yet to make it healthier, so right now it's not the healthiest of muffins, but it's fun to indulge every now and again, and these muffins are definitely worth it. The flavor combination is unique and delicious, and in my opinion, the texture of these muffins comes out perfect.

Number of Servings: 30

Ingredients

    4 cups all purpose flour
    2 tbsp baking powder
    1 tsp salt
    1 cup sweetened coconut
    4 large eggs OR 1 cup egg beaters (this nutrition info. is for 2 eggs and 1/2 cup egg beaters -- all I had on hand at the time)
    2 cups low or non-fat milk of some sort (I used organic unsweetened vanilla almond milk here)
    1-1/3 cups granulated sugar (using sugar substitute would definitely make these healthier --- about 170 calories per muffin, but this particular nutrition information accounts for regular sugar)
    1 cup canola oil
    Approx. 1-2 tbsp lime juice (adding lime zest is optional for more lime flavor and texture)
    2 tsp vanilla
    1 bag white chocolate chips

Directions

Preheat oven to 400 degrees. Line muffin tins with paper liners or spray muffin tin with no-cal, no-fat cooking spray.

Mix together the flour, baking powder, salt and coconut in a large bowl.

In another bowl, combine the eggs, milk, sugar, canola oil, lime juice and vanilla.

Combine wet and dry ingredients. Add the white chocolate chips.

Fill the muffin tins, and bake for about 15-20 minutes, until a toothpick inserted in the center comes out clean.
