Low Cal Thai Red Vegetable Curry Soup

Introduction

Very warming soup - a good way to fill up and also get in those veggie portions. Use any veggies you have. Add chili flakes for more of a kick. Ingredients

    360g cabbage
    100g leek
    150g carrot
    400g chopped tomatoes
    15g thai red curry paste
    100 ml skimmed milk
    1 vegetable oxo cube

Directions

Chop and boil everything together apart from milk. When soft take off heat and blend using a hand held blnder or food prcessor. Add milk and chilis if required.
