Tropical Fruit Salad with Orange Dressing

Number of Servings: 8


    1 papaya
    1 mango
    1 small pineapple
    1 small cantaloupe
    2 apples
    2 kiwis
    1 banana
    1 c. orange juice, divided
    3 Tbsp. lemon juice
    1 c. sugar
    1 egg, lightly beaten


Cut the papaya, mango, pineapple, melon, and apples into small cubes. Put the prepared fruit into a bowl and add the juice. When you are ready to serve, slice the kiwis and banana and add to the bowl. If you are not serving right away, add 1/3 cup orange juice and stir.

Dressing: In a small saucepan, combine juices, sugar and egg. Bring to a boil; cook and stir for 1 minute or until thickened. Strain. Cover; refrigerate until serving. Serve with salad.
