Introduction

Healthy Lima Bean soup (or chowder) with bell peppers, carrots, potatoes, celery, and lima beans. Healthy Lima Bean soup (or chowder) with bell peppers, carrots, potatoes, celery, and lima beans.
Number of Servings: 10

Ingredients

    2 cans lima beans, drained and rinsed
    2 small onions, chopped
    2 red bell peppers, chopped
    3 medium/large carrots, sliced thinly
    2 stalks celery, sliced thinly
    2 small potatoes, chopped
    between 3 and 6 cups chicken broth, to desired thickness
    1 1/2 tsp marjoram
    1/2 tsp oregano
    1/4 - 1/2 tsp basil
    1/2 tsp sea salt
    1/2 tsp pepper
    1 cup half and half

Directions

Add all ingredients except half&half to soup pot. Bring to a boil, then reduce heat, cover, and simmer for 25-35 minutes or until vegetables are tender.

Serves 10.
