Ingredients

    2 medium eggplants, peeled and sliced (830 grams)
    3 small zucchini, cut in strips (568 grams)
    2 tsp olive oil
    1 large onion, diced (315 grams)
    1 bulb garlic, coarsely chopped (38 grams)
    1 hot red chili pepper, chopped, seeds removed
    2 bunches fresh basil, chopped
    1 cup fresh parsley, chopped
    2 tbsp dried oregano or 1 bunch fresh, chopped
    1 tbsp coarse salt

    1 tsp olive oil

Directions

Sauté eggplant and zucchini in 2 tsp olive oil until soft. Set aside. Sauté onion, add garlic, hot pepper and spices. Sauté one minute. Add tomatoes, tomato paste, eggplant, zucchini and cooking wine. Simmer until soft. Purée with a blender until the sauce is no longer chunky, or until desired consistency.
