Chicken Pizzola

Introduction

I found this recipe on recipezaar but I tweaked it a little. Serve with crusty bread (garlic bread is great to) and a salad. I found this recipe on recipezaar but I tweaked it a little. Serve with crusty bread (garlic bread is great to) and a salad.

Ingredients

    Cooking spray
    1/2 cup lean ham, diced
    1/2 cup mushrooms, sliced
    1/2 small, red pepper, diced
    1 small tomato, diced
    2 cloves garlic, minced
    2 tbsp. onions, finely chopped
    1 tsp. dried basil
    4 small skinless, boneless chicken breasts
    (about 4oz each)
    4 tbsp. tomato paste
    1 cup light marble cheese, grated

Directions

Line baking sheet with tinfoil. (Better for clean up) Spray the tin foil with cooking spray. Flatten chicken breasts out to about to about 3/4-1 inch. Place chicken on tray. Spread each breast with 1 tbsp. tomato paste. Combine ham, mushrooms, red pepper, tomato, garlic, onion and basil. Spoon over chicken. Top with cheese. Bake 375 for about 20-30 minutes or until chicken is cooked and cheese is golden.
Serves 4.
