Loaded Potato Soup

Introduction

So rich and creamy on a cold day! So rich and creamy on a cold day!
Number of Servings: 10

Ingredients

    1/4 c bacon grease
    1/4 c olive oil
    1/2 c flour
    1 onion chopped
    1 t olive oil
    3-1/2 lbs baking potato
    1 c grated cheddar cheese (reserve 1/4 c)
    1 lb bacon (reserve 4 T)
    1 c low fat sour cream
    7 c 2% milk
    1 t salt
    pepper to taste
    1 green onion chopped

Directions

Bake potatoes in oven or microwave till cooked through, and set aside.

Cook bacon in a large soup pot, cooking in batches till crisp. Let cool and crumble. Reserve 1/4 c bacon grease and wipe remaining oil from pan, leaving "residue" on the bottom of the pan.

Add 1 t olive oil to the same pan and add 1 medium chopped onion. Cook 3-5 minutes until soft. Remove onion from pan and set aside.

Add 1/4 c bacon grease and 1/4 c olive oil to the pan, then add 1/2 c flour. Whisk until combined and beginning to bubble. Then pour in a little bit of milk at a time, whisking constantly till all milk is added. Bring to a simmer, stirring frequently, and scraping bottom of pan.

In a separate bowl, scoop potatoes from skins and coarsely mash. Add to simming milk a little bit at a time, mashing as you go. Add 3/4c grated cheese, all but 4 T crumbled bacon, and reserved onion and stir well. Add salt and pepper to taste.

Ladle into bowls and top each with cheese, bacon and green onion. Makes 10, 1-1/2 c servings.
