Curry Soup

Number of Servings: 6

Ingredients

    1 16 oz extra firm tofu
    1 tbsp peanut oil
    1/2 tbsp sesame oil

    1 large green pepper, diced as prefered
    1/2 cup diced onion
    1 tbsp olive oil
    1 can Amy's Thai Coconut soup
    1 cup frozen Edemame
    1 tbsp yellow curry powder
    1/8 cup sugar

Directions

1. Brown tofu in peanut and sesame oil.
2. Saute onions and peppers in the olive oil. Once tender, add the Amy's Thai Coconut soup.
3. Once heated through, add edemame. Add sugar and curry. Add browned tofu, or serve on side.
If wanted, serve with steamed rice.
