Parmesan Crusted Chicken

Introduction

Ingredients

    4 small boneless chicken breasts
    6 Reduced Fat Ritz crackers, finely crushed
    1/4 cup Kraft Reduced Fat Parmesan Cheese
    2 Tsp. Olive Oil

Directions

mix crackers and pamesan cheese on plate. Rinse chicken with cold water; gently shake off excess water. Dip chicken in crumb mixture, turning over to evenly coa both sides. Heat Oilin large non-stick skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until golden brown on both sides and cooked through (170 degrees F).

    This was super quick and easy and tasted great! You can cut the oil way down (just use enough to get the pan slick) and the calorie count falls too! I would definitely make this again -- my entire family loved it, even the non-dieters! - 6/16/08

  • I've made something like this by coating the chicken with fat free sour cream, low sodium ritz crackers, and reduced fat parmesean cheeseand then baking it for 30 minutes at 350 degrees...delicious. - 7/28/08
