Ingredients

FILL
1 Can Beans, black, 425 grams
1 Large Canned Tomatoes, 121 grams
1 Can Yellow Sweet Corn, Canned,
Cheddar Cheese, .5 cup, shredded (use low fat if you want)
Onions, raw, .25 cup, chopped
Chili powder, 1 tbsp
Paprika, .5 tsp
Ground Cumin, 1 tsp
(Option: add pre-browned ground turkey to increase the proteine)
Topping
Corn Meal, .75 cup
*Flour, white, 1.25 cup
Baking Powder, 1 tsp
Granulated Sugar, .25 cup
Egg, fresh, 1 large
Directions
Spray crock pot with non-stick spray.
Add all fill ingredients to the crock pot including cheese and spices. Mix well, you will not be able to mix again once the topping is on.
In a separate bowl, mix all the topping ingredients well. Spoon over the top of the fill; use spatula if necessary to get an even cover.
Cover.
Cook on high for 2 hrs OR low for 5 hrs. When the top is firm and brown on the edges, it is done.
