Spinach/Egg Combo Breakfast

Introduction

This is my favorite breakfast and a perfect way to add one of your veggie servings for the day. This breakfast keeps me full until lunch most of the time...it stays with me longer than most others do. I really like the taste. Ingredients

    Egg-2 fresh small
    Spinach-1/2 cup(cooked)may substitue turnip greens for spinach
    Onion-1 TBSP
    Ham (Bristol Brand) or other low fat ham-2 oz.
    Pam cooking spray or other zero calorie spray

Directions

Precook your spinach and onion together(boil). One can will make several days meals.
In bowl combine fresh eggs , spinach,&onions. Whisk to mix thoroughly. Chop ham into bite size pieces and add to mixture, stir again. Salt and pepper to taste.
Spray skillet with non stick spray, heat skillet on medium for a few seconds and add all ingredients. Scramble until well done.
Makes 1 serving
