Spanish Rice (1 cup servings)

Ingredients

    *Rice, Kraft Minute Whole Grain Brown Rice, 4 cup
    Tomato Sauce, .5 cup
    Onions, raw, 1 medium (2-1/2" dia)
    Red Ripe Tomatoes, 2 plum tomato
    Jalapeno Peppers, .25 cup, sliced
    *Corn Oil, 1 tbsp

Directions

Cook rice according to directions on box. Chop all vegetables (dice)... add 1 Tbsp. oil to skillet, add vegetables & rice when it's done cooking... stir together, add tomato sauce & mexican seasonings. (I used a little seasoning from a packet of Enchilada seasonings - not much though). Cook on low, add water as needed to keep rice moist.
