Rumbamel's Outrageously Garlic Asparagus Tortellini

Introduction

I got the basic recipe from the Two Sisters Gourmet and omitted the oil and added asparagus. My son who doesn't eat tomatoes, ate his whole bowl!!! Serving size is 1 1/2 C. Ingredients

    -2 cans, 4 oz each sliced mushrooms, drained and rinsed (makes about 1 c)
    -14 oz can petite diced tomatoes, undrained
    -1 T Outrageously Garlic by Two Sisters Gourmet (PartyLite)
    -45 grilled asparagus cut into bite sized pieces
    -1/2 C grated parmesan
    -8 oz cooked Fazios meat tortellini drained well

Directions

--Rinse the asparagus then trim the ends off or break them up to where they aren't woody. I cook my asparagus in the oven at 425 degrees for about 25 minutes flipping once with a little olive oil. You can also simmer them in some water in a skillet until fork tender or grill them on the bar-b-que until tender. When done cut into bite sized pieces.

--While asparagus is cooking, cook your tortellini as directed. Mine says boil the water then add the pasta and boil for about 3-5 minutes. Drain well. ALSO, put you mushrooms and tomatoes in a med/large skillet and heat on med/high with your seasoning until it comes to a boil, stirring often. When it boils, reduce to simmer and cook for about 5 minutes.

--Add the asparagus, tortellini and parmesan and stir well, heat til warm and serve.

--Makes about 6 C or 4 servings of 1 1/2 C each.
