Crab-Stuffed Potatoes

Ingredients

2 large potatoes, baked in skin and cooled
1/4 cup finely chopped onion
1 tsp butter
1 tsp crushed garlic
1/4 cup low fat sour cream
1 can crabmeat, drained
1/4 cup low fat milk
1 tsp dried parsley
dash black pepper
Directions
Preheat oen to 375 degrees.
Heat butter in skillet and saute onions until transparent. Add parsley. Set aside. Meanwhile, cut potatoes in half, lengthwise. Scoop out potato and place in a bowl. SAve the skins.
Mash the potato pulp with sour cream. Add milk, crabmeat, onion mixture and pepper. Spoon into potato skins.
Place on a baking sheet and bake until heated through. About 20-25 minutes
