Three Bean-Turkey Soup - Rival Ckbk

Ingredients

    1 lb ground turkey (I use 1.25 lbs as that is how it is packaged when I purchase it)
    1 cup chopped onion
    3/4 green pepper (or red, yellow, orange)
    2 cloves garlic, minced
    1 can (16 oz) red kidney beans, drained
    1 can (16 oz) pinto beans or Great Northern, drained
    1 can (16 oz) black beans
    3 cups water
    2 cans (14.5 oz) whole tomatoes, undrained and chopped
    1 can (8 oz) tomatoe sauce
    2 cups sliced carrots
    2 tsp dried oregano
    1/2 tsp dried thyme
    1/2 tsp chicken-flavored bouillon granules (I've also used veggie)
    1/2 tsp salt
    1/2 tsp black pepper

Directions

In a skillet, brown turkey, onions, pepper and garlic. Drain fat. Transfer to Crock-Pot. Add beans, water, tomatoes, sauce, carrots and seasonings. Stir. Cover and cook on Low 8 to 10 hours or on High 4 to 5 hours. Before serving, mash beans slightly for a thicker soup if desired (or use less water).

Serves 10 to 12, one cup is what I figure on as a serving. (I've forgotten the water and gotten a very thick stew that provided 10 servings.)

Great with shredded cheese on top (not calculated in nutritional values), corn bread and green salad or some other green veggie.
