2 egg whites
2 cups sliced mushrooms
1/2 cup finely chopped onion
1/2 cup 1% milk
1/4 tsp black pepper
60 grams low fat cheddar, grated (approx 1/2 cup)
1 1/2 cup diced, lean ham
Non-stick spray (I use olive oil in a spritz bottle)
Spray olive oil in a non-stick pan over medium heat. Cook mushrooms and onion until done.
Meanwhile, whisk together eggs and egg whites, milk and pepper.
In pie pan, sprinkle the ham and the cooked mushrooms and onion. Pour egg mixture over top.
Top with grated cheese.
Bake for 40-45 minutes or until set. Allow to sit for 10 minutes before cutting into wedges.
