Corn Tortillas, 8 tortilla, medium La Victoria Enchilada Sauce, 1 small canStewed Tomatoes, half a can Green Peppers (bell peppers), 1 cup, strips Onions, raw, 1 small Black Olives, 18 jumbo Garlic, 1 tsp Shrimp, cooked, 3 oz Mozzarella Cheese, part skim milk, 3 oz Beans, red kidney, 1 cup
Cut and cook all you veggies except the olives and stewed tomatoes.. Starting with onions and bell peppers once they are soft then add one ingreniedt at a time till you get to the beans and olives. In a different pot put inchilada sauce and stewed tomatoes heat through. Add a little sauce to mix.. In a baking dish put 4 tortillas that are cut in half in one layer. Add half of the cheese and then add all the mixture and spread add the rest of the cheese. Add another layer of tortillas and add all sauce to the top. Preheat over to 430 and bake uncovered for up to 30 minutes.
