6 oz. Healthy Harvest Whole Wheat Blend Pasta (Egg Noodle style)
1 lb. pork loin, trimmed of fat and cubed
2 Tbs sweet paprika, divided
1 medium onion, chopped
3 cloves garlic, minced
14 oz. can petite diced tomatoes in juice
1/2 cup water
1/2 cup fat free sour cream
chopped parsley for garnish
Meanwhile, combine pork with 1 Tbs of the paprika, season with salt and pepper and toss to coat.
In a large skillet coated with non-stick cooking spray, saute onion, garlic and pork, tossing occasionally for 3 to 5 minutes or until pork is lightly browned and onions are softened.
Add tomatoes, water and remaining Tbs of paprika, bring to a boil. Reduce heat, cover and simmer for 20 minutes until pork is tender.
Uncover pork and continue to cook until sauce is slightly thickened. Remove from heat and stir in sour cream. Serve over noodles and garnish with parsley if desired.
Makes 4 servings.
