Mexican Chicken

Introduction

Number of Servings: 4

Ingredients

    1 lb. chicken breasts
    1 teaspoon taco seasoning
    salt, to taste
    1/2 cup endhilada sauce, medium
    1/2 cup fat free grated cheddar cheese
    3 green onions, sliced

Directions

Cut the chicken into cubes and sprinkle with taco seasoning. Grill or saute until cooked. Coat with enchilada sauce and place in a 8X8" oven dish (I used a pie pan.) Sprinkle the cheese over the chicken and bake at 350 degrees for 20 minutes, or until cheese is melted and everything is heated thoroughly. Remove from the oven and scatter the green onions on top.

If you use the 'mild' seasonings, this will be bland. Use the 'medium' seasonings or, if you like, even spicier.
