This is my grandparent's tried and true salsa recipe that keeps everyone asking for it constantly. The recipe makes approximately 16 pints, so be sure to adjust it if you only want one! This is my grandparent's tried and true salsa recipe that keeps everyone asking for it constantly. The recipe makes approximately 16 pints, so be sure to adjust it if you only want one!
Number of Servings: 32

Ingredients

    5 lbs tomatoes, chopped or 5-16 oz. cans chopped tomatoes
    (use chopped tomatoes with green chiles if you want it really hot)
    3 oz. carrots, chopped
    5 oz. celery, chopped
    1.5 lbs onions, chopped
    4 oz. jalapeno peppers, chopped
    3 tsp salt
    ½ tsp pepper
    1 tsp basil
    1 tsp oregano
    1 tsp seasoned salt
    ½ cup sugar
    5 tbsp cornstarch
    ¾ cup white vinegar

Directions

Combine first five ingredients and mix together.
Add the remainder of the ingredients and cook slowly on low in large stock pot for 10 minutes.
Pour mixture into jars.
Process at 5 lbs pressure for 10 minutes

Makes 15-16 pints. Nutrition information based on one cup servings (or 1/2 pint)
