Introduction

This easy dish will fill you up, and keep you going all day! Have fun with the seasonings, this recipe is extremely versatile. For an Italian flair, add 1 clove minced garlic, and some basil and oregano, or for a more southwestern breakfast, top it with your favorite salsa. Enjoy! Ingredients

    3 egg whites, beaten
    1/4 cup fresh baby spinach , chopped stems removed
    2 oz. diced turkey ham
    seasonings to taste

Directions

Spray a small non-stick skillet with Pam. Over medium high heat, brown the ham. Add the spinach, stir until the spinach wilts. Pour the beaten egg white over the ham and spinach mixture, cook thoroughly, season to taste.
Makes one serving
