Chicken and beans

Introduction

One thing to do when you are running out of good choices and you actually have chicken left. One thing to do when you are running out of good choices and you actually have chicken left.
Number of Servings: 10

Ingredients

    Beans, great northern, 2 cup
    Chicken Breast, no skin, 1 breast, bone and skin removed
    Olive Oil, 1 tbsp
    *mixed dry herb, 2 TBS (Mrs. Dash)
    Swanson Chicken Broth 99% Fat Free, 2.5 cup
    1 Pkg. Mixed Vegetables

Directions

The night before do as the package says for soaking beans.
Chop up your chicken breast to bite sized pieces and slightly saute them. When chicken is light pink put into the crockpot to finish cooking along with the beans. IF you don't have Basil leaves just add the two TBS of Mrs. Dash. Add the Chicken broth and turn on crockpot. Low for 8 hours, high for 6 hours. Don't forget to stir the beans every couple of hours. About 20 min before eating add the frozen vegetables. (NOT earlier or you get mushy veggies.) You can add extras, but you need to add them onto your Nutristion tracker.)
This makes about 10 servings at 1 C. each.
