1 cup Spinach 1/4 cup red onion 1 cup cherry tomatoes .5 oz blue cheese 2 oz. lean beef, cooked salad dressing
Place spinach, blue cheese and onion on a plate. Take 2 oz. of leftover lean beef, sprinkle with pepper or cajun seasoning. Saute in a squirt of spray oil till hot. Add tomatoes and move pan around to get tomatoes hot. Pour beef and tomatoes over spinach (hot beef and tomatoes will wilt some of the spinach). Serve with favorite salad dressing. Calories in this recipe is for a light balsamic viniagrette.
