Spiced Carrot & Lentil Soup

Ingredients

    2 tsp Cumin Seeds
    pinch chilli flakes
    1 tbsp olive oil
    600g carrots, unpeeled, washed and grated
    140g red split lentils
    1 litre hot low sodium vegetable stock (you can use normal, but nutritional values will not be right)
    125 ml milk
    40g plain yoghurt

Directions

1. heat a large saucepan and dry fry the cumin seeds and chilli flakes for one minute. Scoop out about half the seeds and set aside.

2. Add the oil, carrots, lentils, stock and milk to the pan and bring to the boil.

3. Simmer for 15 minutes, until the lentils have softened and swollen.

4. Whizz the soup with a stick blender or in a jug blender, or leave chunky if you prefer.

5. Season to taste and finish with a dollop of yoghurt and a sprinkling of the reserved toasted spices.
